10 oz self-raising flour
8 oz soft butter or margarine
4 oz caster sugar
grated peel of an orange or lemon OR 1/2 teaspoon ginger or cinnamon
Pinch of salt
Soften the butter. Work in the sugar and then the flour, peel / spice and salt. Can be done by hand or in a Magimix.
Make little balls the size of a small walnut. Place on a flat, slightly greased and floured baking tray. Flatten with a fork. Bake at 175 for about 20 mins until golden.

NB you don't need to flatten these too much, and don't put them too close together, or you will end up with one giant biscuit, as I did yesterday. Also make sure they cool a bit before turning them out or they will disintegrate. All the little kids that were at my birthday party yesterday (with their parents, naturally) loved them though.
